Ingredients:

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg, beaten
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 cups chicken broth
  • 2 cups chopped spinach

Instructions:

In a bowl, mix together ground beef, breadcrumbs, Parmesan cheese, beaten egg, oregano, basil, garlic powder, salt, and pepper

In a large pot, bring chicken broth to a boil

Drop meatballs into boiling broth

Stir in chopped spinach and pasta

Reduce heat and simmer for 10-12 minutes, or until meatballs are cooked through and pasta is tender

Stir in chopped parsley

Jumping Jackfruit Tacos



These Jumping Jackfruit Tacos are a tasty and filling vegan option for regular tacos. Jackfruit has the same texture as pulled meat, so it can be used instead. With all of their fresh herbs and spices, these tacos are sure to become a family favorite.

Ingredients:

  • 2 cups jackfruit canned, drained, and shredded
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 avocado, sliced
  • Fresh cilantro, chopped for garnish
  • Lime wedges for serving

Instructions:

Set a pan on medium heat and add the olive oil

Put in the minced garlic and diced onion and saut until the onion is soft

To the pan, add diced bell pepper and shredded jackfruit

Cook for 5 minutes

Add salt, pepper, cumin, paprika, and chili powder to taste

Mix things together well

You can warm up the corn tortillas in the oven or on a separate pan

Put some of the jackfruit mixture in each tortilla

Add cheese slices and chopped cilantro on top

Put lime wedges on the side and serve

Easy Baked Chicken Breasts



Making chicken breasts with this recipe is easy and tastes great. With a mix of herbs and spices, these chicken breasts are always juicy and tender after being baked. This dish is great for any event.

Ingredients:

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced

Instructions:

Before you start cooking, heat the oven to 375F 190C

Salt, pepper, paprika, thyme, rosemary, olive oil should all be mixed together in a small bowl

Spread the olive oil mixture out on both sides of the chicken breasts

Warm the oven up and put the chicken in it

Bake for 25 to 30 minutes, or until it's fully cooked and no longer pink in the middle

After taking it out of the oven, let it cool down for a few minutes

Chocolate Raspberry Cupcakes



Indulge in the perfect blend of rich chocolate and the tartness of fresh raspberries with these delightful cupcakes. They are great for National Cupcake Week Day 4!

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2/3 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup hot water
  • 1/2 cup fresh raspberries
  • 1/4 cup chocolate chips

Instructions:

Warm up your oven to 350F 175C and put cupcake liners in a muffin tin

Stir the cocoa powder, baking powder, baking soda, and salt together in a bowl with a whisk

In a separate bowl, mix the eggs, buttermilk, vegetable oil, and vanilla extract

Mix everything together well

Add the hot water a little at a time and keep mixing until the batter is smooth and well mixed

Add the chocolate chips and fresh raspberries to the batter slowly

The batter should be about two thirds of the way up each cupcake liner

After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean

After taking the cupcakes out of the oven, let them cool in the muffin tin for a few minutes

Then, move them to a wire rack to cool completely

They can be eaten plain or topped with your favorite frosting once they are cool

If you want, you can decorate it even more by adding more chocolate chips and raspberries on top

Slow Cooker Chicken Fajitas



When you're busy, this recipe for chicken fajitas in the slow cooker is great. You can leave the work to the slow cooker and come home to a tasty, tender meal.

Ingredients:

  • 1
  • 5 lbs chicken breasts, sliced
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 can diced tomatoes, undrained
  • 1 package fajita seasoning mix

Instructions:

In the slow cooker's bottom, put chicken slices

On top of the chicken, put slices of onion and bell pepper

Add the diced tomatoes on top of the vegetables

Spread the fajita seasoning mix out over everything

Put the lid on top and cook on low for 6 to 8 hours or high for 3 to 4 hours

When it's done, use forks to shred the chicken and mix everything together well

Put it in tortillas and top with your favorite things

Blood Orange & Coconut Creamsicles



Enjoy the cool mix of blood orange juice that is sour and creamy coconut cream in these cute pink creamsicles that look like they belong in a bakery. Citrusy tang and creamy coconut come together to make a delicious frozen treat that is perfect for hot summer days.

Ingredients:

  • 2 cups blood orange juice
  • 1 can coconut cream
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • Zest of 1 blood orange

Instructions:

Using a blender, blend together coconut cream, honey or maple syrup, blood orange zest, and blood orange juice

Mix everything together until it's smooth

Place the mix into popsicle molds

Put the sticks in and freeze for at least four to six hours, or until it's solid

To get the creamsicles out of the molds after they've frozen, run them under warm water

Mediterranean Couscous Salad

Ingredients:

  • 1 cup couscous
  • 1 1/4 cups water
  • 1/4 cup extra-virgin olive oil

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced

Instructions:

Bring 1 1/4 cups of water to a boil in a saucepan

Add the couscous, mix it in, put a lid on top, and take it off the heat

Wait five minutes

Cook the couscous and then use a fork to fluff it up

Move it to a large bowl to cool down

Whisk the lemon juice, ground cumin, salt, and black pepper into the olive oil in a small bowl

This will make the dressing

Add the dressing to the cooled couscous and mix it all together

Chop up the red onion, red bell pepper, cucumber, cherry tomatoes, feta cheese, fresh mint leaves, and fresh parsley and add them to the couscous

Combine everything

Put the Mediterranean couscous salad in the fridge at least 30 minutes before you serve it

Enjoy! Serve cold

Chocolate Espresso Chia Pudding

Ingredients:

  • 2 large eggs
  • 2 crepes
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh spinach
  • 2 tablespoons diced tomatoes
  • 1 tablespoon diced red onion
  • 1/2 tablespoon olive oil
  • Salt and pepper to taste

Instructions:

In a nonstick skillet over medium heat, heat the olive oil

It will take about two minutes of cooking after adding the diced red onion until it turns clear

Add the eggs to a bowl and whisk them together

Add salt and pepper to taste

Mix the eggs with the onions that have been sauted and add them to the pan

While cooking, stir the eggs every so often until they are mostly set but still a little runny

You can make this slow cooker pot roast dinner on a cold night and it will make you feel good. When you cook the beef slowly, it gets very tender, and the vegetables soak up all the great flavors from the broth and seasonings.

Ingredients:

  • 3 lbs beef chuck roast
  • 2 cups beef broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, peeled and chopped
  • 4 potatoes, peeled and chopped
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions:

Place beef chuck roast in the slow cooker

Add chopped onion, minced garlic, carrots, and potatoes

In a bowl, mix beef broth, Worcestershire sauce, soy sauce, thyme, rosemary, salt, and pepper

Pour the mixture over the beef and vegetables in the slow cooker

Cover and cook on low for 8 hours or until the beef is tender

Once done, remove the beef and vegetables from the slow cooker
