Italian Wedding Soup



Italian Wedding Soup is a comforting and hearty dish that combines flavorful meatballs, nutritious spinach, and tender pasta in a savory chicken broth. It's a classic Italian-American soup perfect for any occasion.

Ingredients:

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg, beaten
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 cups chicken broth
  • 2 cups chopped spinach
  • 1/2 cup small pasta such as orzo or ditalini
  • 1/4 cup chopped fresh parsley
  • Grated Parmesan cheese for garnish

Instructions:

In a bowl, mix together ground beef, breadcrumbs, Parmesan cheese, beaten egg, oregano, basil, garlic powder, salt, and pepper

Form mixture into small meatballs

In a large pot, bring chicken broth to a boil

Drop meatballs into boiling broth

Stir in chopped spinach and pasta

Reduce heat and simmer for 10-12 minutes, or until meatballs are cooked through and pasta is tender

Stir in chopped parsley

Serve hot, garnished with grated Parmesan cheese
