You can make this slow cooker pot roast dinner on a cold night and it will make you feel good. When you cook the beef slowly, it gets very tender, and the vegetables soak up all the great flavors from the broth and seasonings.
Ingredients:
- 3 lbs beef chuck roast
- 2 cups beef broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, peeled and chopped
- 4 potatoes, peeled and chopped
- 2 tablespoons Worcestershire sauce
- 1 tablespoon soy sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions:
Place beef chuck roast in the slow cooker
Add chopped onion, minced garlic, carrots, and potatoes
In a bowl, mix beef broth, Worcestershire sauce, soy sauce, thyme, rosemary, salt, and pepper
Pour the mixture over the beef and vegetables in the slow cooker
Cover and cook on low for 8 hours or until the beef is tender
Once done, remove the beef and vegetables from the slow cooker
Slice the beef and serve with the vegetables
Optionally, you can thicken the sauce with a cornstarch slurry for a gravy-like consistency
