Smoky Southwestern Avocado Cups



These Smoky Southwestern Avocado Cups are a delightful fusion of creamy avocado, hearty quinoa, and flavorful southwestern ingredients. Packed with protein and nutrients, they make for a satisfying and nutritious meal or appetizer.

Ingredients:

  • 2 ripe avocados
  • 1 cup cooked quinoa
  • 1 cup black beans, drained and rinsed
  • 1/2 cup corn kernels
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons lime juice
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste

Instructions:

Take the pits out of the avocados and cut them in half

Take some of the flesh out of each half of the avocado to make a bigger hole

Put red bell pepper, red onion, cilantro, lime juice, smoked paprika, cumin, salt, and pepper in a bowl

Add the black beans and mix them in

Combine everything well until it's all mixed together

Put some of the quinoa mixture into each half of the avocado and gently press it in to make it fit

Serve right away, with extra cilantro on top if you want

Temaki Sushi Hand Roll



When you make your own temaki sushi, also called hand rolls, it's fun and lively to eat sushi at home. You can fill these cone-shaped rolls with different kinds of food and make them taste the way you like them.

Ingredients:

  • 4 sheets nori seaweed
  • 2 cups sushi rice, cooked and seasoned
  • 1/2 lb sushi-grade fish tuna, salmon, or yellowtail, sliced
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • 1/4 cup pickled ginger
  • 1/4 cup wasabi
  • Soy sauce, for serving

Instructions:

Lay a sheet of nori on a clean surface, shiny side down, with one corner pointing towards you

Spread a thin layer of sushi rice over the nori, leaving about 1 inch of space at the top

Layer slices of fish, avocado, cucumber, and pickled ginger diagonally across the rice

Add a small dab of wasabi if desired

Roll the nori tightly from the bottom corner, tucking in the fillings as you roll

Once rolled, seal the edge with a bit of water

Repeat with remaining ingredients

Serve immediately with soy sauce for dipping

Balsamic Chicken and Veggie Kabobs Creme De La Crumb



These tasty Balsamic Chicken and Veggie Kabobs from Creme De La Crumb will make your taste buds dance. The tangy balsamic, sweet honey, and savory herbs work perfectly together to add flavor to the chicken and vegetables, making for a delicious BBQ experience.

Ingredients:

  • 5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 zucchini, sliced
  • 1 red onion, cut into wedges
  • 1/2 cup cherry tomatoes
  • 1/3 cup balsamic vinegar
  • 1/4 cup olive oil
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Wooden or metal skewers

Instructions:

Mix honey, balsamic vinegar, olive oil, minced garlic, dried oregano, salt, and pepper in a bowl

This will make the marinade

Put the chicken cubes in a shallow dish or a plastic bag that can be closed again

Make sure that all of the chicken is covered with half of the marinade

Put the meat in the fridge for at least 30 minutes, or better yet, overnight for the best results

Warm up the grill over medium-high heat

Using skewers, alternate between chicken that has been marinated, bell peppers, zucchini, red onion, and cherry tomatoes

Use the rest of the marinade to brush on the skewers

Turn the kabobs over every so often for 12 to 15 minutes, or until the chicken is done and the vegetables are soft and slightly charred

Serve the kabobs hot with any glaze made from the marinade that is left over

Easy Black Bean Burger



This is a quick and easy recipe for black bean burgers that are full of flavor and great for vegetarian meals. You can make these burgers in less than 30 minutes, which makes them a great choice for dinner during the week.

Ingredients:

  • 1 can 15 oz black beans, drained and rinsed
  • 1/2 cup breadcrumbs
  • 1/4 cup diced onion
  • 1/4 cup diced red bell pepper
  • 1/4 cup corn kernels frozen or canned
  • 1/4 cup chopped cilantro
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • 4 burger buns
  • Toppings of your choice lettuce, tomato, avocado, cheese, etc

Instructions:

Use a fork or potato masher to mash the black beans in a large bowl

To the mashed beans, add corn kernels, chopped cilantro, cumin, chili powder, salt, and pepper

Also, add diced onion and red bell pepper

Mix everything together well

Split the mixture in half and shape each half into a burger patty

Set a skillet that doesn't stick on medium heat

Put a little oil in the pan

Make the black bean burger patties

Cook them for four to five minutes on each side, or until they are golden brown and warm all the way through

In a skillet or oven, toast the burger buns until they are just barely golden

Put your black bean burgers together on the toasted buns with the toppings of your choice
