Ingredients:
- 2 cups gluten-free pancake mix
- 2 large eggs
- 1 1/2 cups milk of choice
- 1/4 cup melted butter or oil
- 1/4 cup maple syrup or sweetener of choice
- 1 teaspoon vanilla extract
- Optional toppings: fresh berries, sliced bananas, nuts, maple syrup, etc
Instructions:
Preheat your oven to 425F 220C and grease a sheet pan
In a large mixing bowl, combine the pancake mix, eggs, milk, melted butter or oil, maple syrup, and vanilla extract
Stir until well combined
Pour the batter onto the prepared sheet pan, spreading it evenly with a spatula
Add your desired toppings over the batter
Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean
Remove from the oven and let it cool slightly before slicing into squares
Serve warm with additional toppings if desired
