Autumn Spice Mocktail



Celebrate the flavors of autumn with this festive mocktail bursting with apple cider, cranberry juice, and warming spices.

Ingredients:

  • 1 cup apple cider
  • 1/2 cup sparkling water
  • 1/4 cup cranberry juice
  • 1 tablespoon maple syrup
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • Ice cubes
  • Apple slices and cinnamon sticks for garnish

Instructions:

In a shaker, combine apple cider, sparkling water, cranberry juice, maple syrup, cinnamon, nutmeg, and cloves

Shake well to mix all ingredients thoroughly

Fill glasses with ice cubes

Pour the mocktail mixture over the ice

Garnish with apple slices and cinnamon sticks

Air Fryer Keto Meatballs



These air fryer keto meatballs are a delicious and low-carb option for a satisfying meal. They're packed with flavor from garlic, herbs, and parmesan cheese, and the almond flour helps bind everything together while keeping them keto-friendly. Plus, cooking them in the air fryer gives them a crispy exterior without the need for extra oil.

Ingredients:

  • 1 lb ground beef
  • 1/4 cup almond flour
  • 1/4 cup grated parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

Preheat the air fryer to 375F 190C

In a mixing bowl, combine ground beef, almond flour, parmesan cheese, egg, garlic, oregano, basil, salt, and black pepper

Mix until well combined

Form the mixture into meatballs, about 1 inch in diameter

Place the meatballs in the air fryer basket, making sure they are not touching each other

Air fry for 12-15 minutes, or until the meatballs are cooked through and browned on the outside, shaking the basket halfway through cooking

Serve hot, garnished with fresh herbs if desired

Keto Buttermilk Pancakes



Enjoy fluffy and delicious keto-friendly buttermilk pancakes without the guilt. These pancakes are low in carbs and high in flavor, making them the perfect breakfast treat for anyone following a ketogenic diet.

Ingredients:

  • 1 cup almond flour
  • 2 tbsp coconut flour
  • 2 tbsp erythritol or preferred keto-friendly sweetener
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • 1/2 cup unsweetened almond milk
  • 2 tbsp melted butter or coconut oil
  • 1 tsp vanilla extract
  • 1/4 cup buttermilk or 1/4 cup almond milk mixed with 1 tsp lemon juice or vinegar

Instructions:

Mix erythritol, baking powder, salt, almond flour, and coconut flour in a bowl with a whisk

Crack the eggs into a different bowl and mix them with the almond milk, melted butter or coconut oil, and vanilla extract

Pour the wet ingredients into the dry ones one at a time while stirring them together

Add the buttermilk and mix it in until the batter is smooth

Set a skillet or griddle over medium-low heat and add a little butter or oil to coat it

For each pancake, put 1/4 cup of batter on the pan

Once the top starts to bubble, flip it over and cook until the other side is golden brown

Do it again with the rest of the batter, making sure to grease the pan as needed
